The restaurant was a part of Auerbachs Hof originally, which was built on behalf of Heinrich Stromer between 1530 and 1538. It was also him who inspired the name for the reason that the doctor, city council member and university teacher was simply called „Dr. Auerbach“, based on his birth place Auerbach in Upper Palatinate. In the year 1508 he also operated as headmaster of the university.

Auerbachs Keller owes ist global fame Johann Wolfgamg von Goethe and one oft e scenes in his famous work „Faust“ which was named after the restaurant.

Between 1912 and 1913 most of the place‘s parts were renewed and extended due to the demolition oft he medieval buildings on top o fit and the erection of the Mädler-Passage. The festive opening took place on February 22nd 1913. In this course two nowadays famous figure groups were created: the statue of Mephisto with Faust and the group of enchanted students by the sculptor Mathieu Molitor. They were cast in the brass foundry Noack and still adorn the entry to Auerbachs Keller.
